Amyloglucosidase enzyme is also known as glucoamylase, which removes glucose unit from starch. It is important to add buffer to the enzyme before adding the starch because the reaction will start the enzyme meets the starch. It also creates difference in the pH value which is lower to higher than result into a slow rate of reaction.
